A really yummy potato salad.

Ingredients

4 good sized red skin potatoes(treated in Insta Pot as described)
1/2 cup mayonnaise
1/4 cup sour cream
1 TBSP tarragon vinegar
1/2 tsp salt
1/4 tsp ground pepper
4 green onions (or 1/2 cup red onions) chopped
3/4 cup crumbled blue cheese
1 green pepper chopped

NOTE: red skin potatoes are especially good and irritate Liberals. Tarragon vinegar -soak tarragon in vinegar

Preparation

cut potatoes into 1 inch cubes
cook bacon until crisp and cut into 1 inch pieces
in a bowl combine mayo, sour cream vinegar, salt and pepper
fold in green onions, cheese, potatoes and bacon
can be eaten immediately or after refrigeration
