One of the staples of our rather eclectic diet is hummus. You can buy it in the grocery store bur it's more fun (and cheaper) to make it yourself.
Ingredients
1 cup dry chick peas*
2-4Tablespoon bean liquor
4 T lemon juice
3T sesame oil**
4 cloves garlic
1 teaspoon salt
3/4t ground pepper
1t ground cumin
Optional cup of parsley leaves
* You DO NOT use the dry stuff in the final prep. In fact, you need the chick peas in their hydrated (soft) form. You can use two 15 oz cans of chick peas or the prepared chick peas from 1 cup of dried stuff. You can hydrate the dried chick peas by bringing them to boiling, turn off the heat and let them set overnight.
** In the Middle East, they use Tahini, which is ground sesame seeds. Sesame oil will do as well.
Preparation
Combine all ingredients and blend. We use a small, immersion blender.
