Meat loaf: the ultimate comfort food.

Meat loaf and mashed potatoes are one of the favorites of my family. This recipe can feed six people with three of them big eaters.

Ingredients
the "filler"
1 1/2 cup milk
1 1/2 cup regular oat meal
1 1/4 cup parmaghiana cheese
1 1/2 tsp seasoned salt
1/2 tsp black pepper (ground)
1/2 cup flat-leaf parsley leaves
4 eggs beaten

the meat
3 lb ground beef (80/20)

the bacon cover
10 slices thinly sliced bacon

the sauce
1 cup tomato sauce
1/2 cup ketchup
1 1/2 tsp dry mustard
tobacco to taste

Method of mixing the loaf

1. Mix the filler except the eggs in a large glass bowl
2. lightly beat the eggs in another bowl then add to the rest of the filler
3. Add the meat and combine and mix with hand
4. Make sure all the filler is mixed with the meat. Form the loaves on a baking dish with holes.
5. Form the mass into a loaf and cover with the 10 slices of bacon. Alternatively, you can split the mass into two loaves and cover with slices of bacon.

Cover with 1/3of the sauce.
For the sauce mix 1 cup tomato sauce, 1/2 cup ketchup, 1/2 cup BBQ sauce and 1 1/2 tsp dry mustard

Baking.
Bake for 45 minutes at 350 F
Take out and add another 1/3of the sauce
Bake another 15 minutes

Check if done.
Remove the center slice of bacon and check the meat. If not done, bake another 15 minutes.

Serve with mashed potatoes.
